The hardest thing about making these sticky date puddings was finding where I last put my silicone cupcake moulds! Did you know the variation for the sticky date pudding in the Basic Cookbook is individual steamed cupcakes in the Varoma? I have had my Thermomix for 4 years now and today was the first time I made the magic bean cake everyone raves about. Well instead of the recipe on the Recipe Community I made the Chocolate Bean Cake with Coconut Butter Cream Frosting from Cookidoo because I love guided cooking. I love that it’s refined sugar free and the cake batter doesn’t need milk. I used Coconut milk for the icing. Maya tolerates butter but I have read Nuttelex works well for this recipe. Cakes (and baked goods) are where we are introducing egg to her. This recipe did need 5 eggs so hopefully it won’t be too much for her but I think her love for chocolate cake will win 😂 We’re having dinner at my mum’s to celebrate her birthday so will have to wait until tonight to see what everyone thinks of the cake. My little helper mixing the nuts and seeds before we put them in the oven to dry roast. We’re making the Roasted seedy nut butter from the Something for Everyone cookbook. The recipe calls for 100g almonds and 100g hazelnuts. We could make a nut free version and double the seeds and omit the nuts but we are making sure Maya doesn’t develop an allergy to hazelnuts so I omitted the almonds (she’s anaphylactic) and added some more hazelnuts, sesame seeds and sunflower seeds.
