The chocolate coconut balls from the Something for Everyone cookbook are so easy to make.
The recipe calls for almonds, dates, raisins, cacao powder, orange juice and desiccated coconut.
I followed the tip and made them nut free but substituting the 120g almonds with 40g each of pumpkin seeds, sunflower seeds and sesame seeds.
I also made my own desiccated coconut beforehand from shredded coconut.
After mixing all the ingredient together it was time to roll into small balls. The mixture is very easy to work with and didn’t really stick to my hands. I did spray some coconut oil spray on my hands beforehand just incase but I don’t think I really needed to.
This recipe was easy to make and the ingredients were all pantry staples for me so I just know I will be making these chocolate coconut balls a lot more often for a yummy snack or nice little treat :)
